Where the name comes from
Sāḍhe-sātī is Hindi and Marathi for “seven and a half” (years). The classical texts give Saturn’s results one sign at a time and never name the period. The earliest printing of the name found so far is Khankhoje, 1943. Phaladīpikā 26.22–23; Khankhoje 1943, p. 142
The period runs from Saturn’s first entry into the 12th sign from the Moon to its last exit from the 2nd, retrograde returns included. That span is our convention; the texts do not set it.

What is sade sati?
Saturn’s passage through the 12th, 1st and 2nd signs counted from the sign the Moon was in at birth: about seven and a half years in all. The classical texts give Saturn’s results for each of these signs separately; the name for the whole span is a later one. Phaladīpikā 26.22–23
When does sade sati start and end for my Moon sign?

Why can sade sati pause and restart?
Saturn turns retrograde for about four and a half months each year, so it can step back into the sign before and then return. Steps out of the three signs, back into the 11th or on into the 3rd, fall inside the period, which runs from the first entry into the 12th to the last exit from the 2nd.
